Frozen Fruits

about-image-2

As a rule, I'd never opt for frozen fruit over in-season ripe fresh fruit, but individually quick frozen (IQF) fruits, prepared commercially or in your own kitchen, frozen at the peak of ripeness, retain almost all of their nutrient value.

IQF fruit is 100% natural, with no added sugar or preservatives. It's trimmed and washed, and economical to use. Take what you need, and leave the rest in the freezer. Wash and trim fresh fruit and spread out on a rimmed baking sheet lined with parchment paper. Freeze completely, then transfer to zip-loc bags.

Frozen Vegetables

quote

Frozen vegetables are commercially packaged vegetables that are sold in the frozen section of the store, usually packaged in either rectangular boxes or plastic bags.

Common frozen vegetables found in supermarkets include spinach, broccoli, cauliflower, peas, corn, yam (in Asia), many others, and mixtures of these and other vegetables or other types of food, such aspasta or cheese. They may be cut or processed some other way into a shape or form that is convenient for cooking or eating, and sometimes seasoned.

Carrot

To understand how we pack a better carrot, you have to understand how a carrot develops. If you have ever sliced a carrot lengthwise, you probably noticed the inner core. The core is denser than the surrounding flesh, and it can develop an unpleasantly bitter and woody grain. The core is wider at the base of the carrot than at the tip, where it practically disappears. It naturally follows that the tip is going to have the best taste and texture. We select only those carrots which have a thin inner core. Carrots are further evaluated for colour, and we pass over any that have green or yellow tips because only red (orange) colour tips indicate that the flavour is at its peak. Our carrots are sorted for diameter and length, which provides us with smaller carrots that will be tender, sweet and will cook evenly. Only the tip end, the best part of the carrot, is diced.
